Cotton Candy Lemonade

I saw this on the Today Show (with Kathy Lee and Hoda) this morning and loved it!

Basically, you put a handful of cotton candy in a glass and add unsweetened lemonade to it. YUM!
I tried looking it up but didn't have much success... errrr ran out of time....
But here is Sweet Paul Magazine's edition.

Strawberry cream sandwiched cupcakes

We had some friends over for dinner this week and they brought, for dessert, the yummiest cupcakes I've ever eaten. 


They came out not too sweet and very light and fluffy. 

You basically bake your choice of cupcake, split the tops off when done baking, peel off the wrapper and stuff a whipped cream/berry mixture between the two cupcake pieces. YUM! 

And a very extra YUM when eaten with ice cream. 
(don't forget the powdered sugar on top. it makes a big difference. in a good way)

Homemade Hot Chocolate

For those in cold weather.... or those in warm....

Here is a yummy hot chocolate recipe:

 
  • 1 (14 ounce) can Sweetened Condensed Milk
  • 1/2 cup unsweetened cocoa
  • 1 1/2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 6 1/2 cups hot milk (2%)
  • Mini marshmallows (optional)
Directions:
In large saucepan over medium heat, combine sweetened condensed milk, cocoa, vanilla and salt; mix well. Slowly stir in water. Heat through, stirring occasionally. Do not boil. Top with marshmallows, (optional). Store covered in refrigerator.

Honeydew Melon Bellini

I'm a big fan of anything Honeydew flavored, especially these Melona Bars.
So when I found this Honeydew Melon drink recipe I had to try it.
The original recipe can be found here, but since I'm not an alcohol drinker I twisted it up a bit to my liking (not to mention kid friendly).

Ingredients:
  • 5 cups of diced honeydew melon, about ½ of a large melon
  • 2 Tbs lime juice
  • Sugar to taste based on the sweetness of the melon
  • 1 bottle of club soda or ginger ale

Preparation:

  1. Combine the diced honeydew melon with the lime juice and sugar in a blender and blend until you obtain a smooth puree.
  2. Strain the puree, chill for at least 30 minutes or until ready to use.
  3. Pour the honeydew melon juice into champagne flutes or other glass, no more than half full.
  4. Add the club soda or ginger ale, pouring it gently to avoid making a bubbly mess.
  5. Stir lightly and serve immediately.
It comes out refreshing and bubbly so watch out for the carbonation bubbles.
