I know, I know... Valentines Day just got over and St. Patrick's day isn't for a month from now, but you can never plan too far ahead for a party right?
I just need a good excuse to look forward to something to celebrate. My husband is a part Irish {ok, just a sliver} and I like to make all our meals for the day using the color green.
Every year I make green coconut mochi.
The recipe is below if you would like to try it {it's a soft, chewy, lightly sweet japanese treat}. It's fairly easy, just a little sticky in the end.
And some new cupcake toppers are up in the shop!
Coconut Mochi
{normally colored pink}
Oven set to 330 degrees
4 cups Mochiko flour {rice flour found in the asian isle}
2 1/2 cups sugar
1/2 tsp. baking powder
2 cups water
1 can {12 oz} coconut milk
green food coloring
cornstarch to roll in
Combine dry ingredients then add the wet ingredients and food coloring. Mix well until all lumps are out.
Bake in 9x13 pan at 1 hour 325-350 degrees depending on your oven temperature. Turn off oven after one hour and let sit for 15 minutes inside oven.
Let cool then cut with plastic knife and roll in corn starch to prevent from sticking.
Enjoy!
